Lemon & Herb Goat Cheese Spread
Our refrigerator/freezer went out-ugh! Good thing the bar fridge, gazebo fridge and my neighbors were available. It makes it a little more difficult to cook when you have to go between 3 refrigerators for your food. I kept checking the temperature of the refrigerators so nothing spoiled but, a couple things froze. Yesterday an appliance man fixed it and it was back up to temperature by late afternoon. Yesterday was also our monthly bunco, it was an 80’s theme and I had all the clothes and accessories in the closet! I wore a t-shirt from my 1984 cross country team, class ring, earrings I made in art class my senior year and a neon running jacket. Ha, Ha, great theme Jamie it was like totally awesome. I made a easy and delicious goat cheese spread with all the abundant fresh herbs. Everyone gave it rave reviews and I promised I would post the recipe.
Lemon & Herb Goat Cheese Spread
4 ounces goat cheese, softened
2 ounces light cream cheese, softened
1/2 Tablespoon minced fresh dill
1/2 Tablespoon minced fresh tarragon
1/2 Tablespoon minced fresh parsley
1/2 Tablespoon minced fresh chives
1 teaspoon grated lemon zest
1 Tablespoon fresh squeezed lemon juice
1/2 teaspoon fresh cracked black pepper
Place goat and cream cheese in a medium mixing bowl; blend together with a spoon. Add herbs, lemon zest and juice, and black pepper; mix thoroughly.
Serve the spread with a variety of crackers or grilled bread. It would also be good to place the spread into mini phyllo tart shells and bake until hot in a 350 oven.
