Snow Peas with Garlic & Dill
The snow peas have arrived! They are so pretty with their delicate flowers and vines. My niece Madison comes to mind, when she was a young child and visiting she would always ask if she could just pick them and eat them right off the vine. She loved them fresh off the vine, of course I let her pick and eat all she wanted. I picked the first bunch yesterday and gave them a quick saute for dinner. I tend to think of Asian dishes with snow peas but they are equally as good with fresh dill.
Snow Peas with Garlic & Dill
Olive oil
1 clove garlic, minced
snow peas-2 big handfuls
salt & pepper
1 Tablespoon chopped fresh dill
Heat a medium saute pan over medium-high heat. When pan is hot drizzle about half teaspoon of olive oil. Add snow peas and garlic; toss the snow peas as they cook. If needed add a splash of water; continue to toss until they turn bright green. This will only take a few minutes, season with salt and pepper. Add the fresh dill and serve immediately. They are good without the dill or try a different herb such as mint or parsley. Serves 2.
