Apple Salad
Well, fall is finally settled in and a winter chill is in the air…brrr. I can’t believe it’s November! My neighbor has a couple of apple trees and they were loaded with apples this year. I don’t know what kind of apples they are but they are tasty, free and organic. You know I can’t let anything go to waste. Yes, that means I will be posting lots of apple recipes. The first one I’m going to post is an Apple Salad. My Mom made this a lot through the years; it is easy and loved by all. My Mom makes it with cool whip; I do a combination of cool whip, yogurt and a bit of mayonnaise. I also added cinnamon to the mix. So, go to your local apple orchard and get creative with me.
Apple Salad
½ cup low fat yogurt
1 Tablespoon mayonnaise
½ cup low fat cool whip
½ teaspoon ground cinnamon
4 cups cubed apples
1/3 cup raisins
1/3 cup broken walnuts
In a medium size mixing bowl whisk together the yogurt, mayonnaise, cool whip and cinnamon. I do not peel the apples; you may peel them or do a mix of peeled and not peeled. The skin adds color and extra fiber. Add apples, raisins and walnuts; mix gently until thoroughly combined. Refrigerate until needed.
Variation; instead of nuts add roasted sunflower seeds and try cranberries in place of the raisins.

i used to make apple salad when i lived in ohio—-but i used only apples, yogurt, raisins, and coconut—-and sometimes nuts if i had them on hand
