I created this salad for one, it’s what I had for lunch, with a couple spears of asparagus, an egg, lettuce and spring herbs. My small planting of asparagus gives a few spears a week, not enough to make it a meal but it’s perfect for this salad. Notice I said to use cooked asparagus, [Read more...]

The asparagus has been beautiful this spring. Farmer John sent me some of his organic green and purple asparagus. I usually just grill it and serve with a squeeze of lemon. Artichokes are still in season and we have been enjoying them weekly. I created this yogurt dipping sauce for the artichokes instead of using melted butter. This salad is great to make ahead of time and perfect for a picnic or pot luck. Have grilled asparagus one night for dinner, grill extra asparagus and have this salad later in the week. What a busy time of year for the gardener! Finally, there aren’t any predicted days of frost; are we really past the frost free date?
