I had friends over for a 4th of July cookout and swim; it was a fun filled day with good food and great friends. I wanted to make a quick fresh mozzarella and tomato appetizer, but I didn’t have any fresh tomatoes yet, so I used oven dried tomatoes from the freezer and fresh basil. [Read more...]

I have been experimenting with Quinoa, serving it stuffed in Portobello Mushrooms (see recipe under herbs), using in place of couscous or rice and thought I would try it as a cold salad.
