On these hot summer days a cool crisp radish and the high water content in jicama make a wonderful combination. My husband needed an international dish to take to a work potluck. I created this easy salad with pineapple, black beans, heat from a jalapeño and lots of chopped cilantro. When I was at the farmers market I bought some fresh corn on the cob and it was delicious. I believe the best way to eat in season corn is to simply steam it until just tender and eat it right off the cob. No butter for me, just the fresh taste of the corn. [Read more...]
