My Polish Grandmother always made a side dish with cucumbers, sour cream, fresh dill and thinly sliced onion. It is cool and refreshing so we have it a lot in the summer, I just love the fresh dill. Happy Summer! I am enjoying all the tomatoes and working through my list of must have tomato dishes. This recipe for Shrimp with Roasted Tomatoes and Feta is defiantly worth turning on the oven. I love to have oven-dried tomatoes on hand, especially in the winter when fresh garden tomatoes are unavailable. Oven-dried tomatoes are similar to sundried tomatoes.
