I created this quick pasta recipe using oven-dried tomatoes from the freezer and fresh spring herbs. The tomato plants I started from seed are growing well and I can’t wait to eat the first tomato of the season. Until then I have to wait, so good thing I still have some oven-dried in the freezer. The asparagus has been beautiful this spring. Farmer John sent me some of his organic green and purple asparagus. I usually just grill it and serve with a squeeze of lemon. If you haven’t tried grilled asparagus yet you are really missing something special (look it up under asparagus in this blog). Anyway, this time [Read more...]

The last couple days I had a few friends ask me about their parsley. It’s getting a thick stalk, starting to flower and they want to know what do with it (see pictures above). These fish tacos are delicious, light and zesty. They remind me of fish tacos from taco trucks or the tacos I had in California. I used fish but you can try shrimp or scallops and they would be equally delicious. I always see cilantro and radishes as a topping on tacos. I combined the radishes, cabbage, [Read more...]

Don’t be intimidated by an artichoke. They are easy to prepare and easy to eat. Our family has been eating them since I was a little girl, we loved them as kids and still adore them as an adults. I can’t wait until they come in season, which is March through May. My brother Chuck always [Read more...]
