Tomatoes with Fresh Mozzarella and Basil
I hosted Bunco this month and the theme was salads. We had a great feast from egg salad sammies, BLT panzanella salad, taco salad and a beautiful fruit salad just to name a few. They were all delicious; we have wonderful cooks in our Bunco group. I made a quick salad of sliced tomatoes with mozzarella and basil. I know there are many recipes for this but this is my favorite way to make it. Sliced tomatoes, with sliced fresh mozzarella, torn fresh basil, a drizzle of olive oil and black pepper and garlic salt. You know me I have to have a dash of garlic. You can also add a splash of your favorite vinegar. I like the acidity of the tomatoes to shine through, so I don’t add the vinegar. This is always a pretty dish, especially to showcase the beautiful heirloom tomatoes of summer and everyone loves it.
Tomatoes with Fresh Mozzarella and Basil
Sliced tomatoes
Sliced fresh mozzarella
Lawry’s Garlic Salt
Freshly ground black pepper
Extra virgin olive oil
Fresh basil leaves
Select a beautiful platter, arrange sliced tomatoes on platter and sprinkle with garlic salt. Artfully arrange sliced fresh mozzarella with the tomatoes, grind fresh black pepper over all and drizzle with olive oil. Tear basil leaves and scatter over the tomatoes making sure to have basil on each tomato. Tuck basil leaves in the gaps and a large bunch of basil for a decorative look.
