Quick Shrimp Etouffee
My Mom got a cookbook in New Orleans when we were little and this quick Shrimp Etouffee dish was one she made often. This recipe is made in the microwave and is really easy and quick. Now for you purists who know you’re etouffee, I know it should have the deep roux color by cooking butter and flour for a long time and this does not have all that. It’s still very good though. I also drastically cut down on the amount of butter, added some broth in place of some butter and added a lot more veggies. I guess I revamped the recipe a bit! It still taste just as good but healthier. I remember my Mom used a lot of black pepper and the small shrimp, it sure was spicy! I imagine that was to get us kids to eat more rice and make the shrimp go further. It worked!
Quick Shrimp Etouffee
½ stick butter
1 tablespoon olive oil
2 cups chopped onion
2 cups chopped celery
2 cups chopped mixed bell peppers, such as green, red and yellow
1 cup low sodium broth, chicken, veg or shrimp
2 garlic cloves, minced
½ cup chopped green onions
1/3 cup chopped fresh parsley
1 tablespoon flour
1 teaspoon paprika
1 teaspoon sea salt
½ teaspoon fresh ground black pepper
1/8 teaspoon ground red pepper
1 pound cleaned and peeled shrimp
In the microwave place butter in a 2 ½ quart casserole dish, cover and melt. Stir in olive oil, onions, celery and bell pepper; cook on high for 5 minutes. Stir in broth and garlic; cook on high for 5 minutes. Add green onions and parsley, stir; cook on high for 5 minutes.
Add flour, paprika, salt, black pepper and ground red pepper; stir. Add shrimp toss to coat; cook on high for 5 minutes. Stir and cook on high for an additional 5 minutes or until shrimp are done. I used 40 count shrimp, but you can use just about any size shrimp. Smaller shrimp may go further; check the doneness after 5 minutes and then adjust cooking time.
Taste and adjust seasonings, make it hot as you want. Serve over your favorite rice.

Looks good! I really enjoyed when your mom made etouffe. The first time I ever had it was at your old house in Bellevue.
