Blueberry Hazelnut Salad with a Blueberry Honey Dressing
My husband and I love blueberry season! Blueberry pancakes, fresh blueberries on your cereal or blueberries topped with yogurt, it’s all delicious. With the Northeast in mind, where blueberries are abundant and hazelnuts are very popular, I came up with this salad using fresh lettuces out of the garden. The honey in the dressing gives a sweetness that complements it all well. Enjoy blueberry season.
Blueberry Hazelnut Salad with a Blueberry Honey Dressing
8 cups torn garden lettuce
1 ½ cups fresh blueberries
½ cup toasted hazelnuts-coarse chop
4 ounces crumbled goat cheese
Place lettuce, blueberries and nuts in a large serving bowl. Add dressing and toss to coat. Add goat cheese and toss gently to mix. Serve immediately.
Dressing
¼ cup extra virgin olive oil
1/3 cup blueberry vinegar
¼ cup local honey
1 teaspoon fresh thyme leaves
Salt and pepper to taste
Combine all ingredients and whisk thoroughly to combine. Or put all ingredients in a jar and shake to combine.
Make ahead tips; place lettuce and blueberries in your serving bowl, refrigerate. Place toasted nuts in a sealed separate container, keeps nuts crunchy. Have dressing mixed in a small bowl or jar, refrigerate. When ready to serve, toss as directed in the recipe.
