Peach Amaretto Sundaes
Ohio’s peach crop has been abundant! The peaches are juicy and have a superb taste. In Central Ohio they are picking the last variety of peaches right now, so get them while you can. When I have fresh peaches on hand I make Peach Amaretto Sundaes. Very easy to make and such a grand presentation. Everyone thinks you did so much work and went way out of your way to make it, not so. I recently had a dinner for some friends and finished with this fresh dessert. It was a hit with rave reviews. This recipe serves 2 people but can easily be doubled, tripled, etc.
Peach Amaretto Sundaes
2 cups sliced fresh peaches
¼ cup Amaretto* (almond flavored liquor), extra for drizzling
Frozen vanilla yogurt or your favorite vanilla ice cream
2 tablespoons toasted slivered almonds
Crumbled Amaretti cookies**
In a small bowl place sliced peaches (peeled or unpeeled your choice), pour ¼ cup Amaretto liquor over peaches and toss gently. Refrigerate for up to 8 hours.
In an individual serving dish place a scoop of frozen yogurt or ice cream, top with half the peaches. If you like, add another splash of Amaretto. Top with a tablespoon of almonds, crush a couple Amaretti cookies between your hands and sprinkle on top. Get a spoon and enjoy.
*substitute for Almond flavored liquor, 1 Tablespoon sugar and ½ teaspoon almond extract
**Amaretti cookies are an Italian Macaroon Cookie that does not contain flour. It can be found in the international aisle of your grocery store or at an Italian specialty store.
