Fresh Tomato Herb Salsa/Salad
Tomatoes are slowly starting to ripen, well, what the raccoons and the tomato worms didn’t eat! I did get to sample a few cherry tomatoes before the raccoons got them and they had good tomato flavor so I hope to get some more before this season ends. I planted a new variety, Red Siberian that is supposed to tolerate cold and be earlier to pick than Early Girl. They are now ripening along with the Roma tomatoes. The Red Siberian is small, looks like a hot house tomato and doesn’t have much flavor. My friend, Michelle, planted the “4th of July” Tomato and they were ready to pick by the 4th of July. She brought a few over and boy are they sour! So, I’m still waiting for a tomato with that “summer tomato” taste. No tomato can compare to a vine ripened, juicy, and fresh from the garden tomato. That is why we plant tomatoes. They are the taste of summer. A tomato is so full of flavor you eat it right from the garden or put it on bread with mayo, bite in, and let it drip down your arm… delicious!
Here is a recipe for a “Fresh Tomato Herb Salsa” or you can double the recipe for a Tomato Herb Salad. It’s a great topper for scrambled eggs, seafood, poultry, meat, rice, couscous, pasta… Chop the tomatoes smaller for a bruschetta or a salsa to eat with chips. How about top your mac-n-cheese with it! Yum!
Fresh Tomato Herb Salsa
2 cups rough chop tomatoes
1 Tablespoon extra virgin olive oil
Garlic salt or salt
Freshly ground black pepper
1/3 cup mixed chopped herbs; such as basil, thyme, oregano, dill, chives, tarragon, parsley or mint
In a medium bowl combined tomatoes, olive oil and salt and pepper to taste. Let sit at room temperature for 20-30 minutes, this will allow the tomato juices to release. Add chopped herbs and serve.
The juice is really good and adds flavor to your dish. If you don’t want all the juices make the recipe and serve immediately.
I had a bunch of grilled vegetables leftover. So, I boiled some pasta, a short pasta would be better, added the chopped grilled vegetables, tossed and topped with the Fresh Tomato Salsa. Serve with grated Parm or crumbled feta cheese.
