Where have I been?
OK, sorry I have not been posting many recipes. I did not fall off the face of the earth, I’m still here. I was put on a gluten free diet for 10 days. No big deal, I’m a cook, there are tons of substitutions such as; quinoa, lots of rice’s (brown, red, jasmine), corn products (hominy, grits, polenta, tortillas), potatoes, sweet potatoes and many other things. Well, after 10 days, I felt better and my doctor wants me to do it for a couple more months. After that she will check my blood to see where things are at and let me know if I need to stay gluten free. After 2 weeks, depression set in. I found out I’m a pasta girl and my body was crying for bread, pasta, couscous, noodles, cereal, etc. It seems that I make lots of pasta dishes and side dishes and I didn’t really notice it until now. I tried some of the pasta and it’s good, well, not good but better than I thought. Now the bread on the other hand is terrible! It’s hard to find a product that is lower in carbs and high in fiber. I did have a piece of Easter Bread and a small piece of cake on Easter. It was delicious!
I have been experimenting with recipes and recently created a gluten free waffle. It’s actually light and fluffy on the inside and crisp on the outside. I like it better than gluten waffles so there may be hope for me yet. So, I’ll get back on track and start creating some new recipes with all the fresh spring produce soon.
